July 2026Paul Bertrand started making his Cajun Mop Sauce 15 years ago. At the beginning he just offered it for purchase at the local farmers’ market. Then people encouraged him to take business one step further by saying “you should be selling it in stores.” Betrand founded his company in March 2026. Now, with the sauce hitting store shelves, Bertrand has high hopes for the future.
Why barbecue sauce?
I was just being creative. I have so many other sauces, but I love barbecue sauce. I grew up like a lot of Louisiana natives. We didn’t go to Walmart. Our grandparents made everything. The sauce is nostalgic. It reminds people of growing up eating hamburgers at the football game. It’s similar to the barbecue sauce I grew up eating—Jack Miller’s, Southern. A lot of people miss Southern. Southern was out of Jennings and went out of business. It’s so close to Southern, it’s in three stores in Jennings.
What does your product line look like?
I make mayonnaise from scratch, which then I turn into sriracha mayo and several other mayo products. I also make several hot sauces, glazes and jellies. The Casian sauce will be the next item co-packed. It’s a sweet garlic chili sauce with crawfish boil in it. It’s in four stores now and growing. I’m working on a mayo version of Casian … similar to a bang bang sauce. I’ll make a spicy version mop sauce in the future with a scorpion/reaper blend.
What makes Bertrand’s Cajun Mop
Sauce unique?
I haven’t had anybody tell me it gives them heartburn. Also, there are onions in it, which are ground, not chopped. The ingredients are fresh. It’s not too sweet. Smoked paprika and dark chili powder add a unique flavor to it.
What do you enjoy the most about making Bertrand’s Cajun Mop Sauce?
I enjoy feeding people. I love to watch people eat my cooking. I have shipped the mop sauce to South Carolina, Texas and several other states—the furthest being Washington state. Several TikTok and Facebook creators have made videos with it already. Pat N da Pot is one of them.

I’m at the Farmers’ Market every Tuesday at the Brickhouse. Gabby’s Creole Trap Kitchen food truck uses it on Rabideaux sausage po’boys …. Other places it’s sold include:

What is your hope for your
brand in the future?
I’m currently working on getting more distributers—Brown’s in Hackberry, all the Champagne’s, Stine, Rouses, Market Basket, HEB … I hope to be in 100 stores by the end of 2026. I want to leave a legacy; I want to grow big enough to have something to leave to my grandchildren and children; I want people to know it’s a good sauce; and I want people to share it with their children and grandchildren.
